The most effective method to prepare your venison backstrap for cooking is to sear it in reverse. The reverse seared venison backstrap can be then cooked slowly inside an oven (or smoker) until it’s around 15 degrees less than the temperatures, then cooked with a very high temperature sear using a pan in order to form a nice exterior crust. This is a easier way to reach your target temp without accidentally cooking the meat too long. The reverse searing method helps to dry the exterior of the meat inside the oven, creating the appearance of a fine outer coating. This is ideal for quick searing an extremely hot cooking surface. It also guarantees that the meat has a golden brown crust. Add a delicious blueberry bourbon pan sauce to the mix to create one of the tastiest ways to enjoy deer’s flesh.

50/50 mixture of kosher salt and black pepper

Garlic Powder

1 cup blueberries (frozen or fresh, either or fine)

1/4 Maple Syrup

2 Tablespoons of bourbon (more If you like the strong whiskey flavor)
