The most effective method to prepare your venison backstrap for cooking is to sear it in reverse. Reverse seared venison backstrap is initially slow-cooked within an oven (or smoker) until the temperature is around 15 degrees below your desired temp, and then completed with a high-temperature sear using a pan in order that creates a lovely outside crust.
