The most effective method to prepare your venison backstrap for cooking is to sear it in reverse. Reverse seared venison backstrap is initially slow-cooked within an oven (or smoker) until the temperature is around 15 degrees below your desired temp, and then completed with a high-temperature sear using a pan in order that creates a lovely outside crust. This technique is a easier way to reach the desired temperature without undercooking your meat. The reverse searing process dries up the surface of the meat in the oven, forming it with a light outer layer which is ideal for fast searing on a hot surface and ensures an evenly golden-brown crust. Add a delicious blueberry bourbon pan sauce to the mix, and you’ve got one of the tastiest ways to enjoy your deer meat.

1 cup blueberries (frozen or fresh, either fine)
1/4 Maple Syrup
